How we selected and evaluated

Our primary (but not budget) finalists have to match these criteria:

• A good-sized barbecue has three burners. They’re small but can hold a family supper (chicken breasts, corn on the cob, and a veggie) or burgers and brats for a party.
• A three-burner configuration lets you sear, slow-cook, and roast big meats.
• If you cook in smaller amounts and don’t use indirect cooking, two-burner grills like our budget selection may save you room and money.
• Cast aluminum fireboxes were sought. Cast aluminum fireboxes, where the burners and grates are placed, are rustproof and sturdy, lasting a decade or more. Heat is retained and reflected effectively.
• Budget grills’ thin, porcelain-coated or painted carbon steel fireboxes are prone to rust and don’t reflect heat well.
• Pricing is ideal between $400 to $900. For this price, you can acquire a nice grill without overpaying for capacity, fancy materials, or seldom used add-ons like rotisseries, side burners, and infrared burners.

Btu didn’t bother us. Btu counts for three-burner grills range from 30,000 to 40,000. Our study showed that applying British thermal units effectively, steadily, and equally across grates is just as crucial, if not more so.

Materials vary grates’ performance little. These materials include plain cast iron, porcelain-coated cast iron, and stainless steel rods as thick as a chalkstick or thumb.

Some experts, like Big Apple BBQ’s Joe Salvaggio, prefer porcelainized cast iron for its longevity and heat distribution, but we’ve discovered that the grilling system’s firebox, burners, and burner hoods have a stronger influence.

Grill lid thermometers are unreliable. They do not reliably reflect cooking grate temperature since they are frequently several inches above it. Consider buying a cheap infrared thermometer to measure cooking surface temperature. Or use the hand test.

To choose our favorites, we tested most of the grills in this guide:

Assembly: Poor directions, unnecessary screw or bolt sizes, and sharp edges plagued our grill assembly alone and in pairs.

High-heat grilling: We heated each grill on high with its lids down for 15 minutes and then placed 12 to 15 6-ounce beef patties over the cooking surface to evaluate its ability to produce consistent, high heat without igniting. We checked for flare-ups, excessive charring, and uncooked patties.

We grilled a cut-up entire chicken over medium heat to test each grill’s ability to cook evenly and gently.

We periodically checked for charring and redistributed parts throughout the first 45 minutes with each grill cover down. We turned the chicken, poured barbecue sauce on it, and covered it for 15 more minutes. We checked grill temperatures throughout.

Indirect cooking: We examined if each grill could function as an oven, which is useful in the summer when you don’t want to heat up your kitchen or during the holidays when oven space is limited.

We heated the grills with the outside two burners blazing and the central burner off. We put a 3–4-pound chicken in the middle of the grate and closed the lid. We checked the grills’ temperature during the hour-long cook and observed the browning’s depth and evenness.
